SEARED ORANGE CO HO SALMON

1 1/2 pounds Co Ho Salmon, can use Wild Alaska or Farm Raised 
Juice of two oranges 
1 Tablespoon red wine vinegar 
1 teaspoon hot sauce 
1/4 cup corn syrup 
1 Tablespoon fresh mint, chopped 
2 Tablespoons olive oil 
Marinate salmon with juice from one orange, red wine vinegar, hot sauce, corn syrup, and fresh mint. Marinate for five minutes. 
Pre heat grill, grill pan, or sauté pan. 
Top salmon with olive oil and place on a very hot grill pan. Sear for two minutes on one side, turn then sear second side for 2-3 minutes or until fish is cooked. Top salmon with remaining orange juice while still in pan. 
Serve Co Ho Salmon with cous cous, salad or orzo.
