Grilled Vegetable Salad with Bacon
Makes four – six servings

4 Slices Maple Cured Slab Bacon, small diced then cooked slowly until crisp
Caramelized Garlic, 1/2 head, recipe here
Juice of half a lemon
4 fresh mint leaves, shredded
2 Tablespoons Fresh Chives, chopped
1/4 cup vine ripen tomatoes, chopped
3 cups mixed Salad greens
1 each zucchini, eggplant, red pepper, red onion, leak grilled, chopped
3 tablespoons of extra virgin olive oil
Fresh ground black pepper
Mix cooked bacon, garlic, lemon juice, mint and tomatoes. Allow mixture to marinate for five minutes. Add chopped grilled vegetables and mint. Toss with olive oil and fresh ground black pepper. Marinate for five minutes.
To serve, arrange salad greens on plate. Top greens with bacon grilled vegetable mixture.
